Mixed Vegetable Curry Recipe

Ingredients:
- 1 cup cauliflower florets
- 1 cup broccoli florets
- 1 cup carrot, sliced
- 1 cup green beans, chopped
- 1 cup bell peppers, diced
- 1 cup peas
- 1 onion, chopped
- 2 tomatoes, chopped
- 2 green chilies, chopped
- 1-inch ginger, grated
- 3 cloves of garlic, minced
- 1 tsp cumin seeds
- 1 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp coriander powder
- 1 tsp garam masala
- Salt to taste
- 2 tbsp oil
- Fresh coriander leaves for garnish
Instructions:
1. Start by preparing all the vegetables. Wash them thoroughly and chop them into bite-sized pieces.
2. Heat oil in a large pan over medium heat. Add cumin seeds and let them splutter.
3. Add chopped onions, green chilies, ginger, and garlic. Saute until the onions turn translucent.
4. Add chopped tomatoes and cook until they are soft and mushy.
5. Add all the spice powders - turmeric powder, red chili powder, coriander powder, and garam masala. Mix well and let the spices cook for a minute.
6. Add all the chopped vegetables - cauliflower, broccoli, carrots, green beans, bell peppers, and peas. Mix well to coat the vegetables with the spices.
7. Add salt to taste and mix well. Cover the pan with a lid and let the vegetables cook for 15-20 minutes, stirring occasionally.
8. Check if the vegetables are cooked by piercing them with a fork. They should be tender but still have a bite to them.
9. Once the vegetables are cooked, garnish with fresh coriander leaves and turn off the heat.
10. Serve the mixed vegetable curry hot with steamed rice or roti.
